The name “MoCA” comes from “Modern Concept of Culinary Arts.” The MoCA team approaches cooking as an artistic endeavor, aiming to present modern, healthy dishes with artistic principles of color, fragrance, balance, and overall presentation.

“MoCA” in Cantonese is “無愧,” which stands for a quiet yet sincere gratitude toward guests, which is a fulfillment earned through dedication and passion worthy of great cuisine.
 

MoCA Group’s new R&D Center ensures the continuity, integrity, organization, and disciplined development of the institutional knowledge MoCA has accumulated since 2006.

 

The core mission of the center includes new product research and development, existing product optimization and data compilation, logistics support, warehousing, staff training, and general portfolio operations support.

Established in 2022 and occupying 26,000 square feet in Westbury, Long Island, “MoCA Center” operates a central kitchen that can supply and support all restaurants in the portfolio with standardized pre-processing as well as direct catering up to the highest standards and requirements.

The group was founded by Johnson Chen in 2006 with the establishment of the first MoCA Bistro, after 15 years of culinary and restaurant study and work.

 

During this time, Chen formed a philosophy of dining and cuisine intent on a dynamic balance between the cherished traditions of cultures with thousands of years of history and the universal human spirit of innovation that is best nourished by such traditions. His passion caught on quickly in the local community, and the first bistro grew just as quickly, setting the stage for a second location the very next year.

Since 2006, the company has grown organically from one to eight locations by innovating and perfecting an extensive repertoire of popular dishes.

 

The recipes are unique to MoCA, derived from and inspired by the traditions of Asia’s most popular culinary hotspots. These dishes have evolved over the years while consistently ensuring the success of each new establishment under the MoCA brand.
